I saw a piece on the News a few weeks ago, it had to do with an aging population, covid, and people who seemingly were going to work till 65-70 retiring early.
I am curious does anybody have stats on what careers/job fields would be opening and for what training I should look into for it?

I would look for a job where you can use skills that you excel in and like.
I don't have statistics handy, but many U.S. Government agencies have older workforces with high retirement rates expected in the coming decade. Age is not a factor when applying to agencies such as U.S. Citizenship and Immigration Services, and we have greater opportunities for advancement than many other federal agencies. If you haven't done so, go to usajobs.gov to set up an account to search for positions based on location, qualifications, and preferences.

Search for jobs using the occupation name and your location.
