What is the best trucking company to start out with for experience? I live in Southern California. I already have my CDL.

With regards to companies, XPO has been a high performer and their employees are generally viewed positively. CH Robinson is the big name. Lots of people that now run logistics companies started at CH Robinson.
If interested, look into supply chain programs that would all but guarantee a job such as U of Michigan. You should also look into CSCMP or APICS as two trade organizations that offer various certifications in this field.

Many "employers" will want you to work as an independent contractor, which might suit you and might not. Just be aware during your search that many companies like to pass on the risk (maintenance especially) to the driver, even if the driver leases the truck from a 3rd party.
The independent contractor v. employee landscape is changing in Calif. More (but not all) ICs will be classified as employees, and quite properly IMHO.
