My cousin is an executive chef for a national restaurant group, he has a friend that is a chef in the St. Pete area, I will follow up with some contact information once I receive that. My cousin says that the wholesale people will actually be locally focused and they deal with the actual lobster people and bring the goods into the regional area, and then you would get the lobster from the local guy. Does this make sense? He says this actually makes things more affordable for you, because shipping costs will eat you up for the relatively small amount of lobster you would order compared to a regional wholesaler who supplies to the local area.
