I have heard of some people including their GMAT scores on their resumes. Is there a consensus on whether or not this is a good idea or if it's even appropriate? I got a decent score (740) so I'd be interested to know what people think.

I would agree with Dennis. It's not necessary to include your GMAT.

Thank you all for the answers. I had a feeling that the consensus would be "no, don't put the GMAT on your resume" but I figured I'd ask. The suggestion to put it on the resume came from someone in management consulting. Many of those firms sponsor their employees for MBAs and so I think they will frequently anticipate business school when recruiting new employees. If they know that you'd make a strong candidate for a top-tier business school, that's a definite plus to them. Outside of management consulting, though, I think you're all probably right on the money. I'll file away my GMAT score and only mention it to business schools.
I agree with Dennis Santare. The general standard for a resume is two pages, maximum. A prospective employer is most interested in your roles, responsibilities, challenges, and successful accomplishments. This is especially true as you compete for more senior positions within an organization and will become an important factor in determining your salary and benefits package.
GMAT score matters for graduate school (specifically business school) admissions. Period. Save the real estate on your resume for accomplishments and skills.
I do not see that as an item to be added to the resume. If you've gone on to graduate school, then reference the graduate school.
